Harmful Bacteria Can survive in Cookies for Months



Bacteria have large area of prokaryotic microorganisms. Harmful Bacteria can remain in water, food or anywhere. These bacteria continue to exist in cookies or in sandwich crackers for over six to eight months or even for longer time. Researchers are saying that it will lead to food borne diseases which are related to desiccated foods.
New research has discovered that Pathogens, like salmonella, can survive for at least six months in cookies and sandwich crackers.
The recent study by the researchers instigated on how long the bacteria can survive in certain foods causing the increased number of outbreaks of food borne diseases which are related to desiccated foods.
"They possess an increased number of outbreaks of diseases related eating desiccated foods. Researcher Larry Beuchat from University of Georgia US said that we would not wait for salmonella to arise in foods that have dry conditions.
The researchers found that harmful bacteria not only survive in dry foods, such as cookies or sandwich crackers but can remain for longer periods.
To examine the foods which caused in previous food borne outbreaks, researchers used five different serotypes of salmonella which are unique.
Beuchat said that the foods with low moisture content which are isolated.
Focusing on cookie and cracker sandwiches, the salmonella found in cookies and crackers, the researchers filled with four types of stuffing and placed them into storage.
The researchers tried using cheese and peanut butter stuffing for the cracker sandwiches and vanilla and chocolate filling for the cookie sandwiches.
This is the variety that found in grocery stores or vending machines, Beuchat said.
After storing, the scientists determined for how long the salmonella continue to exist in each stuffing.
The salmonella did not existed in the cracker sandwiches and was present in the cookie sandwiches," explained by Beuchat. Further adding that they also discovered that in some cases, the pathogen survived for at least six months in the sandwiches.
After examining, scientists concluded that some food borne pathogens can "survive for unusual lengths of time in desiccated foods," Beuchat said.
At present, researchers are looking forward to test all ingredients that are commonly used in making this food. Beuchat added, if ever there is a possibility that food borne pathogens are present in some specific components, they will start working to stop using those specific ingredients to protect people from the food borne disease.
